Activity 3: Evaluation of the Quality of Extruded Pea Fiber Products
Planned result: Obtained 4 different samples with starch and pea hull ratios, as well as
analyzed at least 3 extrusion process parameters
Work performed and progress achieved during the period from 01.03.2024 to 01.06.2024:
During the reporting period, Activity 2 was finalised as well as Activity 3 was initiated and
completed, thus concluding the industrial research part of the project. In Activity 3, four
different samples with starch and pea hull ratios were analyzed according to the obtained
parameters. The results of the activities indicated good properties for using these peas in the
food industry – high water absorption rates.
