Work performed and progress achieved during the period from 02.06.2024 to 01.11.2024:
During the reporting period implementation of Activity 4 “Application of the Extruded Pea Fiber Product prototype in production of meat substitute and flour products was completed. Activity was performed in successful cooperation with Latvia University of Life Sciences and Technologies ASNS Ingredient developed the following products:
Transfer of developed products to production was evaluated and recommendations made. On the bases of results obtained the scientific article was published in scientific journal Foods 2024, 13, 3985.
